If I could be a librarian… I'd sit around and read all day.  Maybe I'd get through all the books on my 'to read' list. 

If I could be an inn-keeper… I'd own a little bed & breakfast in an old light house in Michigan.  And I'd winter someplace warm. 

If I could be a scientist… I'd invent a bizarre product, sell it via informercials with Cher and retire. 

If I could be a llama-rider… I'd bring the sport to the states by combining it with Nascar.  Maybe I could even sell add space on the llama's neck.*

If I could be a gardener… maybe I'd be able to keep plants alive.  I'd invent an every blooming Lily of the Valley.  Their my favorite. 

*Just seeing if you were paying attention.  I wouldn't do that really.
